A recent study sought to evaluate the effectiveness of milk, yogurt (without added sugar) and cheese in fighting cavities.  Cavities are caused by acid which, in turn, is produced by bacteria in the mouth.  A pH of 7 is considered to be neutral, so an acidic environment occurs when the pH drops below 7.  It’s once the pH drops below 5.5 that the damage really starts to happen.  Cheese was found to be much more effective than milk or yogurt in increasing the pH in the mouth, thereby creating an environment that is less conducive to decay.  That’s not to say that milk and yogurt are harmful.  In fact, the author reported that milk possesses many of the desired properties for a saliva substitute.  But if you can’t brush your teeth after a meal, go for the cheese.  It’s an effective way of fighting cavities.
